200 g | of cleaned porcini mushrooms |
1 | small chopped onion |
about 500 ml | Vegetable broth. |
80 g | of grated Trentingrana cheese |

Slice the mushrooms.
Sauté with a little oil, the onion and the sage.
Add the mushrooms
Pour in the barley and let it brown.
Add the hot vegetable broth, season with salt and pepper.
Continue cooking adding little by little the rest of the hot broth.
Peel, core and dice the apples.
Add the apples ten minutes before cooking is completed.
When the barley is done, add a tablespoon of extra virgin olive oil and the grated cheese. If necessary, add some more hot broth.
