Rinse the apples and with a corer create many little balls from their pulp. Dip them in lemon juice to avoid oxidation.
Halve the bread slices and toast them.
Dice the feta cheese.
Lay a piece of feta cheese and an apple ball on each piece of toasted bread, then season with some pepper. Decorate with mint leaves and serve.
