shortcrust: knead quickly the flour, the cocoa, the cold butter cut into pieces, the sugar, the salt and the egg.
Add the orange zest. Shape the dough into a square, and let it chill for 2 hours in the fridge wrapped in plastic.
Mousse: peel, core and dice the apples.
In a casserole, cook the apples with the sugar and 100 g of water. Then pour the mix into a blender.
Melt in the corn starch in the liqueur, then mix it in the apple purée and simmer until it thickens. Pour the mix into a bowl and cover it tightly with plastic wrap and let it cool down.
Roll the dough 3 mm thick, a little piece at a time. Cut with a flower-shaped cutter. Line Ø 5 cm baking cups, previously buttered. Prick the bottom of the dough with a fork. Bake at 170° C for 15 minutes. When done, let set for 5 minutes then take out from the baking cups and let cool down on a rack.
With a sac à poche, fill the flower baskets with the apple mousse.
Decoration: decorate the baskets with apple dices, currants and mint.
