Peel, core and slice the apples.
Sauté the apples in a pan with a little oil, season with salt and if desired also some pepper.
Lay the veal slices, then layer the ham on each slice of meat.
Complete the layers with the apple slices, grated pepper and the cheese.
Fold over the veal slices and close with a toothpick.
Roll each cordon bleu in the flour, then dip them into the beaten eggs and finally in the breadcrumbs.
Heat the frying oil and fry the cordon blues. Make sure they are evenly fried on both sides. Dry the excess oil and salt to taste. Serve immediately with a mixed salad.
