Tiramisù with caramelized apples

Ingredients

Mascarpone cream:
4 yolks
350 g of mascarpone cheese
100 g of icing sugar
3 tablespoons of hot brandy
200 g of whipping cream
Caramelized apples:
150 g of sugar
50 g of whipping cream
1 pinch of powdered cinnamon
30 g of butter
extra:
4 ladyfingers
brandy and powdered cinnamon

STEP 1

Mascarpone: mix with a spoon the mascarpone cheese. 

STEP 2

Beat the egg yolks with the icing sugar, while slowly adding the hot brandy. Keep on beating till the mixture becomes smooth and thick. Then add the mascarpone cheese.

STEP 3

Gently fold in the whipped cream to the mix. 

STEP 4

Chill in the fridge.

STEP 5

Syrup: mix 6 tablespoons of brandy with some powdered cinnamon. 

STEP 6

Lay two pieces of ladyfingers on the bottom of a serving cup. Damp them with the liqueur and cover with the mascarpone mix.

STEP 7

Chill the cups in the fridge.

STEP 8

Caramelized apples: pour the sugar in a casserole over low heat till it starts to caramelize.

Add some cinnamon, and pour the warm cream. Blend in the ingredients, then add the apple slices, previously peeled.

Cook the apples over low heat for 4-5 minutes, gently mixing them through. Let cool down, then lay the apple slices over the mascarpone. Serve with the cooking juices of the apples. Decorate with chocolate curls.
