Greek apple pie

80 g of butter
120 g of icing sugar
4 eggs
150 g of almonds
1 package of round puff pastry dough
100 g of caster sugar
230 g of flour
25 ml of favourite liqueur
1/2 lemon
1 teaspoon of yeast (3 g)
1 pinch of salt
60 g of berry jam
decoration: icing sugar

80 g of butter

Filling: finely chop the almonds with 80 g of caster sugar. In a bowl, beat the butter and icing sugar till white and fluffy.
Continue beating and add one yolk at a time and add the lemon zest and liqueur.
Sift the flour, yeast and salt, and beat the egg whites and remaining sugar (20 g) until they form a stiff peak.
Then add to the liquid batter, alternating with the flour-yeast-salt mix.
Add the almonds mixing them through.

Peel the apples.

STEP 2

Dice the apples in large cubes.

STEP 3

Add apples to the butter.

STEP 4

Lay the puff pastry dough in a Ø 22 cm springform pan, previously buttered and sprinkled with flour. Dough must overlay the border of the pan.

STEP 5

Spread the jam over the dough.

STEP 6

Pour the batter and fold over the excess dough. Bake at 170° C for 45 minutes (after 35 minutes protect the pie with aluminium foil), then lower the oven temperature at 150° C and continue baking till toothpick inserted in the centre of cake doesn’t come out clean and dry. It will take approximately 35 minutes. When done, release the pie from the springform pan and let cool on a rack.

Decoration: sprinkle the pie with icing sugar.
