Shred the speck and sauté in a hot pan with a little oil.
Peel, core and slice the apples.
Add to the speck and sprinkle with the chopped chili pepper. Let sauté for a few more minutes.
Rinse and slice the escarole salad. Lay on a serving plate.
Add the speck and apple slices.
Season with some extra virgin olive oil, salt and pepper and sprinkle with the seed mix for a final touch.
