Dough: mix the flour, the sugar and the salt, then add the diced butter, blending all the ingredients till they reach the consistency of breadcrumbs. Add the cold water and knead into a dough.
Divide the dough in two parts, one larger than the other, and let them set and chill in the fridge for 2-3 hours (best of overnight).
Filling: peel, core and thinly slice the apples.
In a bowl, mix the sugar, flour, cinnamon and apples slice
Grease a Ø 27 cm pie-pan and sprinkle it with flour.
Roll the bigger dough and lay it in the pie-pan.
Fill with the apples and sprinkle with the butter.
Roll the smaller dough and cover the pie. Make small cuts with a knife in the middle and on the border of the pie. Make sure the border of the pie is properly sealed.
Beat lightly the egg white and brush it over the dough, then sprinkle with sugar.
Bake at 180° C for 25 minutes protecting the pie with aluminium foil, then take away the foil and keep on baking for other 25-30 minutes or more, till the crust turns golden brown.
